Campari Passion Egg

( for 10/15 sphere) 

2 oz Campari Bitter

3 oz Passoa (Passion Fruit Liquor)

1,5 gr Sodium Alginate

Calcium Bath

Orange Reduction

Pour into a tall container Campari Bitter, add 0.5 gr of sodium alginate and mix everything with an electric mixer until there will be no more lumps. Pour the product obtained into a glass, and let it stand in a refrigerator for 1 hour. In another container pour the Passoa, and add 1 gr of sodium alginate; repeat the same procedure with the mixer, and let it rest in the fridge. Prepare small spheres of Campari Bitter with a small spoon, and leave them in water. To prepare Passoa sphere use a spoon one or two sizes larger than the one used previously: fill the spoon with the mixture of alginate and Campari only for a third of its size. Put the Passoa sphere above, and then fill the spoon completely before putting it in the calcium bath. Serve on a finger food spoon, and add 2 dashes of orange reduction.
