Castello di Barbaresco

Piedmont distillery producer of Grappa founded in 1980. Spirits are obtained by distilling fresh pomace not silaged: the distillation period begins in mid-September and ends in November. It is used pot still that works in a vacuum: with this measure, the temperature inside is below seventy degrees centigrade and this allows to limit the extraction of essential oils from seeds, responsible for the most trivial and vulgar tastes, preserving in distillate fragrance and flavor. Grappas are presented in two versions: a non-aged of natural color and amber in color, due to aging in small oak barrels.
