Scent

Fragrance or family of fragrances perceived directly by the nose or retronasally during a sensory analysis of a beverage.

The scent can be classified by origin:

Scents of defects, are the smells and tastes of cork, scum, sulfur, mildew, rot, dry, stable, etc.. They are abnormal and unpleasant odors that usually come from external agents and only in rare cases are considered acceptable;

Primary scents are the fragrances that come directly from the original product. Typically the primary scents are flavors of musk, sage, pink, peach, pear, grass, pepper;

Secondary scents, fragrances that are created by the work of enzymes before fermentation and of yeast during fermentation. Typically secondary scents are flavors of flowers and fruit;

Tertiary scents, fragrances released during the maturation period of the drink. Typically tertiary scents are flavors of animal, spices and ethereal.

Aromatic scents, fragrances that closely resemble the scent of the product of origin;

Floral scents are fragrances that recall a set of notes of flowers. For example, young white wines generally present floral scents of flowers of acacia, hawthorn, etc, young red wines generally present floral scents of violet, fresh rose, etc, and aged red wines present floral scents of dried violet, dried rose and so on;

Fruity scents, fragrances that recall various types of fruit, from apple, banana, peach or melon to strawberry, wild berry and then to jam or dried fruit. For example, young wines present hints of fresh fruit or even immature, while aged wines present hints of ripe fruit, ripe, jam or even dried fruit;

Vegetal scents, fragrances of fresh chopped herbs, fresh peppers, tomato leaf, etc..;

Spicy scents, fragrances that remind the spices. Typical of this family are the scents of vanilla, cinnamon, cloves, black pepper, anise, etc..;

Toasted scents, fragrances that remind roasted barley, coffee, tar or wood smoke. Usually result from aging of the drink;

Animal scents, fragrances that reminid the animal world, such as the smell of leather, of wild but also of sweat and cat pee, which are part of the scents of defects;

Ethereal scents, fragrances that remind the smell of wax, nail varnish, wax. If well-constructed they contribute positively to form the complexity of the bouquet;

Different scents, fragrances not covered by the previous families as fragrances of honey, tobacco, cheese, vinegar, sulfur, medicine, wood, butter, flour, silicon, mushrooms, sweat, goat, etc..Sometimes they enrich the bouquet, but sometimes are caused by defects.

Profumo o famiglia di profumi che, nelle analisi organolettiche delle bevande, vengono recepiti per via nasale o retro nasale.

I sentori si possono classificare per provenienza:

Sentori di difetti, sono gli odori e sapori di tappo, feccia, zolfo, muffa, marcio, secco, stalla, ecc. Sono odori anomali e sgradevoli che normalmente derivano da agenti esterni e che solo in rari casi sono considerati accettabili;

Sentori primari, sono gli aromi che derivano direttamente dal prodotto di origine. Sono tipicamente primari i sentori come muschio, salvia, rosa, pesca, pera, erba, peperone;

Sentori secondari, sono gli aromi che si vengono a creare a opera di enzimi, prima della fermentazione, e dei lieviti, durante la fermentazione. Sono tipicamente secondari i sentori floreali e di frutta;

Sentori terziari, sono profumi che si sviluppano durante il periodo di invecchiamento della bevanda. Sono tipicamente terziari i sentori animali, di spezie ed eterei.

Oppure si possono classificare per famiglie descrittive:

Sentori aromatici, sono quei profumi che ricordano molto da vicino l’aroma del prodotto di provenienza;

Sentori floreali, sono profumi che richiamano un insieme di note di fiori. Ad esempio i vini bianchi giovani presentano generalmente sentori floreali di fiori di acacia, di biancospino, ecc, i vini rossi giovani presentano sentori floreali di viola mammola, di rosa fresca, ecc, e vini rossi invecchiati presentano sentori floreali di violetta appassita, rosa appassita ecc;

Sentori fruttati, sono profumi che richiamano vari tipi di frutta, spaziano dal riconoscimento di mela, banana, pesca o melone fino alle fragole, ai frutti di bosco e infine alla confettura di frutta o la frutta secca. Ad esempio i vini giovani tendono ad avere sentori di frutta fresca o addirittura acerba, mentre i vini invecchiati tendono ad avere sentori di frutta matura, stramatura, confettura o addirittura frutta secca;

Sentori vegetali, sono profumi di erba fresca tritata, peperoni freschi, foglia di pomodoro ecc;

Sentori speziati, sono profumi che ricordano le spezie. Tipici di questa famiglia sono i sentori di vaniglia, cannella, chiodi di garofano, pepe nero, anice ecc.;

Sentori tostati, sono profumi che ricordano l’orzo tostato, il caffè, il catrame, il fumo di legno ecc. Derivano solitamente dall’invecchiamento della bevanda;

Sentori animali, sono quei profumi che ricordano il mondo animale, quali il profumo di cuoio, di selvatico ma anche di sudore e di pipì di gatto, che fanno parte dei sentori di difetti;

Sentori eterei, sono quei profumi che ricordano l’odore della ceralacca, dello smalto da unghie, della cera. Se ben costruiti concorrono positivamente a formare la complessità del bouquet;

Sentori diversi, sono tutti quei sentori che non rientrano nelle precedenti famiglia come profumi di miele, tabacco, formaggio, aceto, zolfo, medicina, legno, burro, farina, silicone, funghi, sudore, capra, ecc. Talvolta vanno ad arricchire il bouquet ma altre volte sono originati da difetti.
